Transectioned Red Cabbage Suspended In Parallel Planes

- 15 sticks of Agar Agar from the Philippines
- 1 head of organic Cabbage
- thread, cardboard
- 1 cup white vinegar
- 5 cups icing sugar
- Plexiglas box
- Clear packing tape
- Canola oil for coating Plexiglas
Build 'Cabbage in Suspension' box from Plexiglas, accounting for the
dimensions of the cabbage as well as the space in between the slices
of cabbage.
Seal the seems with sturdy packing tape, test by filling with water,
in the sink, apply more tape if leaking persists.
Lightly coat the inside of the box with the oil, to allow for a clean
release of the Jelly.
Mix the first layer of Agar Agar with water, following the package's
instruction, 3 sticks per layer is recommended to anchor each slice
incrementally, avoiding dislodging and float-ups.
Add 1/3 cup of icing sugar per stick of Agar Agar, ignoring the
package's instruction.
At the end of cooking the Jelly, add 3 tablespoons of vinegar.
Pour into box, let the Jelly set.
Begin to place the cabbage slices, vertically on the first layer of
Jelly. This where the thread is helpful to keep each slice together as
the next layer of Jelly sets.
Use a piece of cardboard with notches for each slice, to stabilize
each slice from sagging, until each layer of subsequent Jelly engulfs,
and obscures (set Agar Agar is cloudy, maybe the vinegar has something to do with this).
Pour all remaining layers, removing the cardboard and thread before
the last layer.
When the Jelly has sufficiently set, bust the packing tape on all
four corner, releasing the alien.
Cut into slices, enjoy with vodka, sour cream, pickled herring and
fried/caramelized onions. |
